Lentil Soup
1 cup dry lentils, rinsed and drained
5 cups water
1 cup chopped green bell pepper (1 large)
1 cup sliced carrots (2 medium)
1/2 cup chopped onion
2 cloves garlic
1/4 cup dry veggie soup mix
1/2 tsp dry sage
1/8 tsp ground red pepper
1/2 tsp seasoned salt
1/2 tsp liquid smoke
Method 1: Mix everything together in a pot. Bring to a boil. Reduce heat, cover and simmer for about 1/2 hour until veggies and lentils are done.
Method 2: Mix everything except the onion, garlic and peppers in a pot. Bring to a boil. Reduce heat, cover and simmer for about 1/2 hour until veggies and lentils are done. In the meantime, saute the remaining veggies until crisp tender, then add them to the pot with everything else.
When everything is done, you may want to blend the soup to get a uniform texture. You can do this in batches in a blender or use a submersion blender.
