Sourdough Cornbread

Did you know you can make cornbread using sourdough? I had never really thought about it until I started thinking of things to use my sourdough starter with. I've been making muffins, and really how different is cornbread than muffins? Cornbread adapts quite well to sourdough!

Sourdough Cornbread

1 cup cornmeal
1/2 tsp salt
1/3 cup dehydrated cane juice

Mix together, then add:

1 egg
1 cup sourdough starter
1/2 cup water

Whisk together, then in a small bowl, mix 1 tsp baking soda with a little water, then whisk it all together quickly. The mixture will puff up from the reaction of the soda and sourdough.

Pour it all in a 8x8 pan and bake at 350 degrees for 25 minutes, or make muffins: 1/4 cup batter in each muffin cup and bake for 20 minutes-- should make about a dozen muffins.
