Tuesday's stir-fry was pretty good. I used a frozen veggie blend. Peas, onions, carrots, & mushrooms. The pineapple sauce was thick and applesauce-like, but I expected that. It was pretty good. However, it was too spicy for my kids and my husband wouldn't even try it, so I have some leftover. I think I'll just eat it on top of the leftover rice.
Wednesday's lasagna was also pretty good. It wasn't the best lasagna I've made, but still pretty good. I added tomato sauce to the marinara, which diluted the flavor some. My niece joined us for dinner, she said it was pretty good even though she picked out the mushrooms, which my 8 year old gladly ate for her. My niece even took the leftovers to work for lunch today. I did make a french bread to go with it, but not a salad.
